Ingredients

1 slice of Sourdough bread

2 Eggland's Best eggs, Large

2 Eggland's Best yolks

1 ripe avocado

2 slices of tomato

2 tbsp lemon juice

1/4 tsp vinegar

1/4 tsp Himalayan pink salt

1/8 tsp of chili powder

1/8 tsp of black pepper

1/4 cup of unsalted butter, melted

Preparation

  1. Make hollandaise sauce
  2. Melt butter on stove over low heat. Crack and separate four egg yolks into a bowl. Whisk together thoroughly. Whisk in lemon juice, then sprinkle in Himalayan salt, black pepper and chili powder then whisk together. Remove butter from heat and slowly pour into bowl while whisking. Set aside.
  3. Prepare bread, tomato and avocado
  4. Slice sourdough bread, toast lightly. Grab tomato and cut two slices. Cut open an avocado and slightly mash.
  5. Poach Eggs
  6. Crack two whole eggs into a bowl. Bring a pot of water to boil then lower heat to simmer. Add in 1/4 tsp of vinegar. Tip egg into the center of water. Let it cook for 3-5 minutes (your preference on how hard you’d like the yolk)
  7. Assemble toast
  8. Grab toasted bread slice, spread avocado mash on top, add sliced tomato, then poached eggs. Drizzle hollandaise sauce on top. Enjoy!
