⅓ cup milk
¾ cup plain panko breadcrumbs
2 lbs. ground chicken
1 Eggland’s Best egg, large (lightly beaten)
2 tbls. low-sodium soy sauce
3 tbls. green onion chopped
4 garlic cloves, minced
¼ cup carrot, finely grated
¼ tsp. ground ginger
¼ tsp. salt
¼ tsp. black pepper
Asian Sauce
⅔ cup hoisin sauce
¼ cup low-sodium soy sauce
⅓ cup rice vinegar
4 cloves garlic minced
1 tsp. sesame oil
1 tsp. sesame oil
Optional garnishes
Sliced green onions
Sesame seeds
Preparation
Meatballs
- Preheat oven to 450 degrees. Line 2 baking sheets with parchment paper and set aside.
- In a small mixing bowl, combine the milk and panko breadcrumbs. Set aside and let the breadcrumbs soak for 5 minutes.
- In a large bowl add the panko milk mixture, ground chicken, egg, soy sauce, green onion, garlic, carrot, and spices. Using your hands, mix just until combined (do not overmix, it will cause the meatballs to be dense).
- While the meatballs are cooking, make the sauce.
Asian Sauce
- In a small saucepan, combine the hoisin, soy sauce, vinegar, garlic, sesame oil, and ginger. Bring the mixture to a low simmer, then reduce heat to low and cook for 2-3 minutes.
- Add the meatballs to a large bowl and cover with sauce. Serve hot. Garnish with sesame seeds and sliced green onion, if desired.
- Pro tip: Serve with fancy toothpicks or over rice with extra sauce drizzled on top.
