Applesauce Walnut Bread

Ingredients
- 2 cups all-purpose flour
- 1 cup whole-wheat flour
- 1 tablespoon baking powder
- 1 tablespoon ground cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 cups one-minute oatmeal, uncooked
- 1 cup light brown sugar, packed
- 1 1/2 cups golden California raisins
- 1 1/2 cups chopped walnuts
- 2 1/2 cups unsweetened applesauce
- 2⁄3 cup canola or vegetable oil
- 4 Eggland's Best eggs, large
- 1/2 cup low-fat (1%) milk
Preparation
- Preheat the oven to 350°F. Lightly grease and flour two loaf pans with non-stick cooking spray and set aside.
- In a large bowl, combine the flours, baking powder, cinnamon, salt, baking soda, oatmeal, brown sugar, raisins, and walnuts. Stir until well combined.
- In a medium bowl, whisk together the applesauce, canola oil, eggs, and milk.
- Add the applesauce mixture to the flour mixture and stir until the dry ingredients are moistened.
- Fill the prepared pans with the batter, dividing evenly.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Let bread cool before slicing.
