Ingredients

  • 3 large tart Washington apples, cored and chopped in large chunks
  • 4 slices of bacon, cooked crispy and crumbled
  • 2 tablespoons coconut oil
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons honey
  • ½ teaspoon rubbed sage
  • 2 cups larger sized plain salad croutons
  • 4 large Eggland's Best eggs
  • 1 tablespoon butter
  • 1 tablespoon coconut oil
  • ½ cup shredded sharp cheddar cheese

Preparation

Instructions:

Cook bacon on medium heat until crispy in large iron or heavy skillet. Set aside. Leave 2 tablespoons of bacon grease in the skillet. Add coconut oil.

Toss apples in a bowl with sugar, cinnamon and honey.

Add apples to hot skillet and sprinkle with sage. Stir often until sugar is dissolved and apples have begun to soften, no more than 10 minutes.

Remove apples and set aside.

Add butter and coconut oil to medium skillet on medium high heat.

Toss croutons in skillet until toasty. Set aside.

Adding additional butter and coconut oil if needed, fry the eggs tossing some of the oil over the yolk until edges and bottom are crispy or until cooked to desired yolk firmness. Salt and pepper to taste.

Toss croutons, apples, bacon pieces and cheese together and divide between four individual serving bowls.

Top each with one crispy egg and serve.
