Apple Vanilla Bread Pudding

Ingredients
- 1 lb day old bread, crusts removed
- 3 Granny Smith or Fuji apples
- 5 Eggland's Best eggs (large)
- 1 cup sugar
- 1 cup canola oil
- 1 package instant vanilla pudding mix (3.5 oz)
- 3 teaspoons cinnamon
- 4 Tablespoons sugar
Preparation
Preheat oven to 350; coat a 9X13 pan with non-stick cooking spray and set aside.
Soak bread in water until soft, then squeeze out as much water as you can; set aside.
Peel and thinly slice apples.
In a large bowl, mix eggs, sugar, oil and vanilla pudding mix until smooth. Stir in the apples and bread.
Grease with cooking spray a 9X13 pan, or three small loaf pans. Pour mixture in pan or pans.
Mix cinnamon and sugar and sprinkle over top of batter.
Bake for 1 hour or until a toothpick inserted in the center comes out clean.
