Apple Scrapple Breakfast Sliders
Every year the Apple-Scrapple Festival is held in Bridgeville, Delaware to tout our famous scrapple and our crisp winesap apples. Scrapple is a meat that is very popular in the Mid-Atlantic states, especially in Delaware. It’s a local delicacy!

Ingredients
½ cup ketchup
½ cup roasted peppers
4 tablespoons butter, divided
2 Granny smith apples, peeled, each cut into 8 wedges
2 tablespoons brown sugar
1 tablespoon lemon juice
4 half-inch slices scrapple
8 slider rolls
4 Eggland's Best Eggs (large), beaten
¼ cup milk
¼ teaspoon salt
Preparation
- Heat oven to 200 degrees F.
- Spoon ketchup and roasted peppers into a food processor and puree until fairly smooth. Set aside.
- Melt 2 tablespoons butter in a 10-inch skillet over medium heat.
- Add apples and sautee 2 minutes. Sprinkle brown sugar and lemon juice over apples and continue cooking until apples are glazed and tender.
- Remove apples to a plate and keep warm in oven.
- Wipe out same skillet and melt 1 tablespoon butter over medium-high heat.
- Add scrapple slices and brown 2-3 minutes on each side. Remove scrapple from skillet, cut each slice into quarters and place on a plate.
- Keep scrapple warm in oven.
- Wipe out same skillet and melt 1 tablespoon butter over medium heat.
- Blend eggs, milk and salt. Add mixture to skillet and mix to scramble, cooking until eggs are just set.
- To assemble sliders
- Spread about 2 teaspoons ketchup over the cut sides of slider rolls.
- Top each with 2 scrapple portions, 2 apple wedges and scrambled eggs, divided equally.
- Place lids on sliders and enjoy.
