Apple Cinnamon Muffins
Soft muffins flavored with vanilla and cinnamon with bites of fresh apples cooked in brown sugar and cinnamon.

Ingredients
1 1/2 cups all purpose flour
1/2 cup granulated white sugar
1/2 cup packed brown sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/3 cup vegetable or canola oil
2 Eggland's Best Egg, Large
1/3 cup milk
1 large apple

1/4 cup sugar
1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp vanilla extract
2 apples (cored & diced)
Preparation
- Preheat the oven to 350 and prepare your pan.
- Add the chopped apples, brown sugar, cinnamon and vanilla extract to a small saucepan over medium heat. Stir to combine and stir often so nothing sticks. Cook the apples until they're tender or about 10 minutes. Turn the heat off, cover the apples and set them aside.
- In a bowl, combine the oil and sugars until smooth then add one egg at a time, making sure to mix well after each one. Then add the vanilla extract and cinnamon to the bowl, then mix well.
- In a separate bowl, combine the flour, baking powder and salt.
- Fold the dry ingredients into the wet ingredients with a spatula. Then add the milk and apple mixture to the batter. Gently combine everything together until the batter is smooth.
- Scoop the batter into 24 muffin paper cups. Be careful to not overfill the muffin wrappers. Bake for 15 to 20 minutes, or until the the muffins pass the toothpick test. Remove them from the oven, let them cool and enjoy!
