Apple Cinnamon Bars

Ingredients
2 cups white-whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 Large Eggland's Best eggs
3/4 cup plain Greek yogurt
1/2 cup unsweetened applesauce
1/3 cup maple syrup
2 teaspoons vanilla extract
6 tablespoons melted butter
1 cup chopped apples
2 tablespoons brown sugar
2 teaspoons cinnamon
Preparation
- Preheat oven to 350 degrees F. Spray a medium sized glass baking dish with nonstick spray
- In a large bowl, stir together the flour, baking powder, and baking soda
- In another bowl, whisk together the Greek yogurt, applesauce, maple syrup, eggs, vanilla and butter
- Mix together the dry ingredients with the wet ingredients
- Mix together the apples, brown sugar and cinnamon
- Pour batter in the baking dish. Very gently add the apple mixture to the dish and lightly swirl in the apples
- Bake for 25 minutes or until bars are cooked through. Let cool and slice!
