Ingredients

½ cup Eggland’s Best Egg Whites

½ cup organic cane sugar (or caster superfine sugar if you have it)

1 tsp. pure almond extract or rum extract

2 1/3 cups almond flour

1/4 cup gluten-free flour

Powdered sugar, for dusting

Almonds, optional for center cookie placement

Preparation

  1. Preheat your oven at 350 degrees or on a cookie setting if you have it.
  2. Using a mixer with the whisk attachment, beat the egg whites until they are white and foamy for about 1-2 minutes.
  3. Add sugar while beating, then add the extract. Switch your whisk attachment to the regular paddle.
  4. On the low setting, add flour. Switch to using your hands if you have a hard time.
  5. Roll each cookie into balls. Dip each cookie ball into powdered sugar and place them on a baking sheet lined with parchment paper. Flatten each cookie gently with your fingers or the back of a spoon and place an almond in center.
  6. Bake until light golden brown, 15-20 minutes. Enjoy!
