Ingredients

  • 4 puff pastry shells
  • 1 tablespoon butter
  • 4 Eggland's Best eggs, large
  • 2 tablespoons Creme Fraiche (or 2 tablespoons heavy cream)
  • 2 teaspoons chopped chives, plus extra for garnish
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 4 oz. goat cheese
  • 4 oz. smoked salmon

Preparation

  1. Prepare puff pastry shells according to package instructions.
  2. Whisk eggs together with salt and pepper and set aside.
  3. In a medium saute pan melt butter over medium-low heat; add eggs and creme fraiche (or heavy cream). Stir with a rubber spatula continually until eggs are just cooked - eggs should have a small curd, like ricotta, and should remain moist.
  4. Add chopped chives and lemon zest and stir to combine.
  5. Cut goat cheese into 1 oz. rounds; place 1 oz. goat cheese in the bottom of each puff pastry cup.
  6. Top with 1/4 cup egg mixture, 1 oz. salmon, and 2 1-inch pieces of chive.
