A classic quiche without the crust! Serve with a fresh fruit salad for a perfect brunch dish.

- 6 Eggland's Best eggs
- 1 cup cooked turkey sausage
- 1/2 cup low-fat cheddar cheese, shredded
- 3 oz. fresh spinach, chopped
- 2 tablespoons grated onion
- 2 tablespoons skim milk
Preheat oven to 375 degrees F; spray a 9-inch glass pie dish and set aside.
Remove casing from 2 turkey sausage links and crumble; in a non-stick medium skillet over medium-high heat, cook until done, approximately 5-7 minutes; remove and set on a paper towel to drain.
Whisk eggs, cheeses, spinach, onion and milk together until well combined; stir in turkey sausage and pour into pie dish.
Sprinkle with additional cheese (if desired) and bake for 15-20 minutes, or until quiche is firm.
