Ingredients

4 Eggland's Best eggs, large

2 cups skim milk

1/2 cup butter, melted and cooled

2 cups yellow cornmeal

2 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

2/3 cup granulated sugar

Preparation

  1. Preheat oven to 350 degrees F; spray a 9 X 13 pan with non-stick cooking spray.
  2. In a medium size bowl, mix eggs, milk and butter and set aside.
  3. In a large bowl, combine cornmeal, flour, baking powder, salt and sugar with a large fork; slowly add the egg mixture to the cornmeal mixture, mixing well and mashing out any lumps.
  4. Pour batter into pan and bake for 25 minutes or until golden brown on top.
  5. Cool for 5-10 minutes before serving.
