
Boiled Egg Burrito

This hearty breakfast burrito recipe features perfectly cooked eggs as its star ingredient! These versatile wraps can also be sliced into smaller portions to serve as crowd-pleasing appetizers at your next gathering
Ingredients
5 Eggland's Best Hard-Cooked Peeled Eggs
7 flour tortillas (white or whole wheat, based on preference)
2 tablespoons extra virgin olive oil
1 small sweet onion, finely diced
1/4 cup fresh tomatoes, diced and drained
1/4 cup colorful sweet peppers, finely diced
1/2 cup premium turkey or chicken sausage, diced
4 slices American cheese
1/2 cup sharp cheddar cheese, freshly shredded
Preparation
- Begin by hard-cooking the eggs; once cooled, peel and dice them before setting aside.
- In a small skillet, brown the diced sausage for approximately 5 minutes until cooked through; drain excess fat and reserve.
- Heat olive oil in a medium skillet over low heat; increase to medium and sauté onions and peppers for 2 minutes until softened.
- Add diced tomatoes, stirring occasionally until any excess moisture evaporates.
- Remove from heat, combine with cooked sausage, and set the mixture aside.
- Cut each slice of American cheese into 4 even strips.
- Place 2 cheese strips in the center of each burrito-sized tortilla and microwave on a microwave-safe plate for 20 seconds.
- Remove from microwave and layer with 2 tablespoons each of diced eggs and sausage-vegetable mixture, finishing with a generous sprinkle of shredded cheddar.
- Fold the burrito carefully and heat for an additional 15 seconds before serving.
- Continue this process with remaining ingredients to prepare all burritos.
