A delightful twist on classic deviled eggs, this avocado deviled eggs recipe combines creamy avocado with perfectly cooked eggs for an irresistible appetizer or snack!

Ingredients

6 Eggland's Best Hard-Cooked Peeled Eggs

2 avocados

1 tablespoon Dijon mustard

1 teaspoon lemon juice

1/4 teaspoon ground pepper

Fresh parsley leaves for garnish

Preparation

  1. Begin by carefully cutting the ripe avocados in half. Remove the peel and pit, then dice one portion into small, uniform 1/2-inch cubes- this will be used later as garnish. Mash remaining avocado and place in food processor bowl.
  2. Peel eggs and cut in half lengthwise; remove yolks and set whites aside.
  3. Add yolks to food processor bowl with avocado and add mustard, lemon juice and pepper; blend until smooth.
  4. Spoon fillings into egg whites and garnish with 1 avocado cube and parsley leaf. Place eggs on a platter, cover and store in the refrigerator for at least 1 hour before serving.
